Da Kong Hans Kælder åbnede i 1976, var vi nogle af de første her til lands, der tilbød gæsterne det, alle i vore dage kender som ¿den store menu¿. Begrebet afløste processen med at vælge sin egen menu som oftest på tre retter ud fra et a la carte kort. Idéen var at give gæsten en mulighed for at smage et menuforløb, hvor kokken bestemte forløbet, samtidig med at eksponere det bedste fra en given sæson i en samlet og gennemarbejdet menukonstellation.
